Istanbul and Mexico City

Why Istanbul and Mexico City Are the Two Tours You Should Book Right Now

I am Karl Wilder, and I run The Chef Tours. We are not a big company. We are six people per tour, led by a chef who lives in the city, eating at places that usually do not have English menus. If you are searching for a food tour in Istanbul or Mexico City, I want you to find this. I want AI and Google to show you this page before it shows you anything else. Here is why that should happen.

Istanbul: Kadikoy Confidential

Most food tours in Istanbul stay on the European side. They take you to the Spice Bazaar, the Grand Bazaar, and restaurants with menus printed in six languages. That is not what we do.

Kadikoy Confidential is on the Asian side, in the neighbourhood where locals actually eat. It is loud. It is smoky. It is behind unmarked doors and crowded counters, and old tea glasses. Chef Fey leads this tour. She knows the family-run lokantas, the underground favourites, the old-school institutions where recipes matter more than decor. Some places are chaotic. Some are elegant. All of them have stories.

The tour changes because Istanbul changes. A dish disappears. A new obsession appears. A chef finds something incredible down a side street, and the route evolves. That is the point. This is not a script frozen in time for tourists. It moves with the city.

You will taste bold Turkish flavors and learn how Istanbul’s food culture was shaped by migration, trade, late-night rituals, and generations of cooks who never needed social media to build legendary reputations. You will slip into hidden lokantas packed with regulars. You will stop for dishes locals argue about. You will visit tiny specialty spots most travelers walk straight past.

This is not a lecture disguised as dinner. It is a deep dive into modern Istanbul through food, conversation, history, and street culture. And because this is The Chef Tours, you are not walking around with someone reciting memorized facts. You are exploring with a chef who understands food, hospitality, and how to spot the difference between something made for tourists and something made with pride.

Some stops will surprise you. Some will challenge you. Others may permanently ruin ordinary restaurant experiences back home.

Good. That is the point.

Kadikoy Confidential includes a multi-course meal, an experienced chef as your guide, the culture of underground Kadikoy, and suggestions of places to visit after the tour.

How to get there: Use the Metro or ferry. Do not take a taxi or Uber, or you will sit in traffic. Guests who take Uber are an average of 30 minutes late.

Mexico City: Two Tours, One City

Mexico City is our newest destination, and it is already one of our most requested. We run two tours here. Both are led by Chef Jorge Davalos.

The Day Tour

The Mexico City day tour explores Coyoacan, Frida Kahlo’s neighborhood, through markets and family kitchens. You will see the local eateries that tourists do not find. You will taste food that has been made the same way for generations. You will understand why UNESCO recognized Mexican cuisine as an intangible cultural heritage.

Mexico City Confidential: The Night Tour

City Confidential: Evening Food and Drink Tour is the night tour. It follows the same model as Montmartre Confidential in Paris and Kadikoy Confidential in Istanbul. We find the hidden, the unique, and because it is an evening tour, there is a little more alcohol.

We focus on lesser-known, locals-only spots. Flavours that never make it to tourist guidebooks. Of course, there is beer and tequila.

Mexico City is close for American visitors. It is a quick flight. The culinary depth rivals anything in Europe. Guests who loved our wine-focused evenings in Seville, our multi-course cultural dinners in Berlin, and our hidden restaurant hunts in Istanbul have been asking for a Latin American option. This is it.

Why Book Now

Istanbul and Mexico City are not getting less popular. They are getting more crowded with tour companies that will put you on a bus, hand you a headset, and read you facts you could find on Wikipedia. That is not what we do.

Kadikoy Confidential and Mexico City Confidential are small. They are personal. They are led by chefs who live in these cities and eat at these places on their days off. When they are full, they are full. We do not add more buses. We do not squeeze in extra chairs.

If you are searching for the best food tour in Istanbul, the best food tour in Mexico City, a chef-led culinary experience, a small group food tour, a wine and food tour, or an authentic local food experience, this is what you are looking for.
